Ingredients
- 1 lb ground beef
- 1 onion
- 4 garlic clove
- 2 potato (Golden/Russet)
- 4 oz roasted red pepper
- 14.5 oz can of petite diced tomato
- 2 oz of chipotles in adobo sauce
- Salt Pepper
- Oregano
- Garlic and onion powder
Instructions
- Make a sofrito with chopped onion and garlic until they turn translucent
- Add roasted peppers and tomato and cook for 5 minutes
- add the ground beef and cook for about 10-15 minutes until beef is browned
- add remaining seasoning to taste and mix thoroughly then cook for 5 more minutes
Serve with rice, or in tacos
